This does have some scientific grounding (paper on this - link below) and as was used on violins/violas/cellos etc which were considered 'proper' instruments. When 'new' guitar instruments arrived it was seen fit to align them to the heritage of classical instruments so as to be taken seriously.
Also, the F shape was based on a Cleff shape combination but simplified for ease of mass manufacture on early violins etc.
