    Fun programme but why didn't they use radio mics? The volume is all over the shop on my headphones, one voice quiet another loud.

    I formed the impression that the discussions were recorded, on the hoof, from a single microphone. Consequently, the volumes of the individual voices were proportional to how loudly each contributor spoke and where they were within the mic's pickup pattern.

    The acoustic guitar examples sounded like they were done separately and blended in afterwards. Ducking compression may be at work too - the guitar volume being reduced whenever the voices are present.

    I dare say that, where voices do not overlap, levels could have been evened out

    Thanks for that, will listen on my way to work tomorrow.  I always chuckle when I think of David Quantick calling Richard Hawley "Roy Snorbison", then I feel dirty because David Quantick is a prick...
