The Hypnotic Brass Ensemble are on at the Hare and Hounds on Wednesday which would probably be my pick of the bunch although it's a fair way from the city centre.
Even further out Shadowplay ( Rory Gallagher tribute) are on at Tower of Song on Thursday. I haven't been there for a few years, quite a small venue IIRC although they regularly put on live music.
For a studenty vibe probably The Sunflower Lounge or Subside both near the centre and regularly have live music.
There is a free jazz band in the Symphony Hall at 5pm on Friday; these are usually to a pretty high standard although with less element of a likely stabbing than many of the local venues.
You could get a train or tram out to Bilston as there is usually something on at the Robin 2.
I can't think of any jam nights still going although I guess they exist.

Henderson's got a dream CV: Herbie Hancock's 'Mwandishi' band of the late 60s/early 70s, Art Blakey, Elvin Jones, McCoy Tyner and lots more. Still playing strong and a rare chance to hear him in the UK.
