i have done a few over the years, and even imported about 30 spalted maple tops but sold most of them.  The spalted maple you see on many production guitars can be a bit dull - i like fine black lines and some additional figuring

I do struggle with it, because from a structural and tonal point of view its extremely flawed wood - but it can look pretty

This  was the first i built nearly 15 years ago

then a couple with burl/spalt/flame after that

    then some spalted blackbursts

I still have one maple and one beech top remaining

What actually causes spalting? Is it a fungal growth or something? Mineral staining?

    Fungal growth.

its the early stages of rot.... some of the stuff sold is actually well past the early stages or rot.

Often you see a black rose pattern in the stump of a dead tree.  If you look through most piles of firewood you will see some.... depending on the species

From what I remember, you can spalt wood after it's cut by keeping it moist and introducing a fungus, but it won't be great.  It will look like mineral streaks.  The fine black lines only appear in living wood as the tree defends itself from attack.
