Okay this should be simple.
Simple but frustrating.
Vance Joy, "Riptide"
When the chorus comes in there's a little skip.
My head isn't even sure now how long the rest is.
How would you count it so you can pick up the 1 on the chorus?
First chorus comes in at 0:39
Second chorus at 1:26 same trick

I count it as being just a hair over a bar long.  Maybe an extra 16th note but I doubt it's intentional.  I think the bar just drags a bit.

If it's for the purpose of playing along to the original I'd just keep playing it until I got the feel for it and not worry too much about it.  For playing with a band I'd just take it as a bar and make sure that everyone is watching the drummer the first few times you run through it.

I dunno, I think it's intentional because it does it twice.
And I've sussed it because it was driving me mad!
Count an extra "ah" -- which yes, is an extra 16th note.
I've just never had to do that before so wasn't sure how to.

    1 e & ah 2 e & ah 3 e & ah 4 e & ah ah 1

Intentional but probably done in post production as opposed to being counted by the artist and the whole band. He doesn't do it in live performances. It's one of those studio tricks to make songs more interesting.

Here is another example at 1:08

Gawd why didn't I think of seeing how he did it live?!
Yes, studio shenanigans seems quite likely now you mention it.
