How to stop iTunes

I'm recording demo tracks with StudioOne - that all works fine. I generate a .wav, convert to .mp3 and play it - which opens iTunes.
But when the song is finished, iTunes goes on to play the track after the last one it played when it was last open. Which was a bit of a shock to the system as I've just recorded a demo of a quiet ballad, which segued into Larks Tongues in Aspic part 2.
Anyone know how to stop iTunes after it has played a stand-alone mp3?
Note: I tried submitting a question to Apple Community support, but got an error about too many redirects.
