I don't think I've missed any, but it's entirely possible. South Africa follows in the spring, and Qatar is soon, depending on work schedules. They won't let you into Yemen at the mo - even Socotra
I've also seen into Israel, Palestine and Syria from Umm Qais in Jordan, but it's a bit dodgy up that way these days

Slightly depressingly I have just realised I have not added any new countries to my list in around 3 years. I did not leave Scotland or get on an aeroplane until I was 17 though, so while my complete list is ok, it definitely needs more work!

As someone who grew up in Norfolk and saw friends go on gap years all over while I was happy to stay home I am well and truly a changed individual. I filled my last passport in about 2 years and I'm nearly there on its jumbo-sized replacement. Only 3 double pages left and they won't last long!
I think we'll head back to N America next year as we get an awesome companion ticket offer with a credit card that makes long-distance really attractive, and we had a great roadtrip earlier this year, so I'd love to do another.
Chile and Peru look good too but they're a hell of a long way from the Middle East!

Denmark. 1987. Our host drank beer non-stop all day, then drove us to the airport.

Egypt. 2002. Their ancient history is very different.
France. Too many times to mention. “Un seize, un rouge”
Germany. Too many times to mention. “Zwei bier bitte”
Greece. 2000. They don’t like the Germans.
Hong Kong (before it returned to China). 1960s British infrastructure.
Hungary. 2002. Didn’t understand a word.
Iceland. 1977. Passenger next to me had a heart attack, causing emergency landing.
India. 2007 and 2008. If I had to live in another country then India would be my choice.
Italy. Too many times to mention. Company accounts, tax accounts, management accounts - little relationship between them.
Luxembourg. 1968. Nation of money changers.
Nepal. 2008. Poor and struggling kingdom.
Netherlands. Too many times to mention. Lots of beer.
Philippines. 1997. Static traffic.
Poland. 2018. Cheap cigarettes.
Portugal. Too many times to mention. Interesting history, but now sidelined on the western tip of Europe.
Russia. 1988. Proud citizens in a demoralised country.
Spain. Too many times to mention.
Sweden. 2016. Rural, quiet, and delightful. “Dos cerveza”
Switzerland. Too many times to mention. Carmenere vines protected by the geography.
Thailand. 1997. More static traffic.
Tunisia. 1989. “Cartago delenda est” means there’s not much left.
Turkey. 1976. Built on the remains of three empires means there’s some interesting history.
USA. Too many times to mention. Interesting to visit, but not somewhere I’d choose to live.
Yugoslavia (while it still was). 1976. Stuck for 24 hours because they managed to crash two trains head on, closing the international mainline.
