Interesting things to do with Butternut Squash?

Going to have lots. Lots and lots.

We bought a half ton of seconds at the end of the season last year for animal food cheaply and couldn't get through all of it before it went off as the winter was mild. Put it all on the compost heap and fast forward to the spring, the seeds actually germinated naturally!!

Now it has taken over about a 5 m2 are and some of these Squashes are big. Had some rain and there are plenty of new buds now as well.

All my Hungarian wife wants is to just oven roast them. I find the taste ok but not really loving the texture.

Bit of a loss of what to do with it. Any ideas?

    if you puree it with a little bit of salt and pepper, then poor the whole lot down the sink and buy the two biggest steaks you can find, then it's lovely.

    My go to is sausages & squash roasted with cherry tomatoes. 

    peel & cube then par boil the squash 
    brown sausages
    chuck the above in a roasting pan with cherry tomatoes, oregano, garlic, chilli flakes
    add cream, drizzle olive oil and a little bit of lemon juice or white wine
    grate a smidge of nutmeg over the top

    Roast that for 45-60 mins until you squash is going black at the edges

    If you get fed up with eating the things..
    Draw silly faces on it then give it to a neighbour that knocks on your door too much. They wont come round again.
    Carve it to a sharp point and use it as a belly button fluff remover.
    Paint them purple and flog em on e bay as OG Mr greedy organic toys.
    Slice in half and slide up and down the fretboard and see if it works as a string cleaner/ fingerboard conditioner.
    Dont worry, be silly.

    Roasted, but with a cinnamon twist. Goes great with anything like rice & pasta, or just on it's own/as an accompaniment to a main course.
    It's sweet enough, so I don't tend to use as much sugar (omit it completely or use maple syrup/pomegranate molasses) & can confirm that adding sage leaves works well for a more savoury take.
