I obviously don't get it.
My junior I just love, less to fiddle with and worry about just use tone and volume when needed.
I find it's like amps. I much prefer a single channel amp because otherwise the other option just feels like a compromise to me. These days I find myself using the guitar controls a lot more to sculpt the output and tone and don't find I'm missing out just because I can't flick to another pickup.
Maybe one day I'll go back but for now I'm pretty content.
I do use neck pickups for fun though, haven't taken them out of my PRS/Gibson. I don't have any guitar that couldn't have a neck pickup. The great thing with Strats is you can change combinations without routing ever being visible.
If you're using a motorbike analogy I see it more like this as a single pickup:

Some folk also put Bigsbys on their guitars which would be kind of similar to fitting a spoiler on a motorbike
