OK, being more serious... probably still one - Boss DF-2 or maybe a RAT. I have actually done this.
If it has to be more of an amp-in-a-box - if you can't guarantee even a usable clean tone from the provided amp... still one - Mesa V-Twin.
If we're going for three I'd probably take a delay and a phaser as well.

R n R - delay, drive and a boost. Tremolo is nice, but far from essential.
I do like a volume pedal, and a wah. Could live without both, though.
If I can go slightly bigger I'd replace the GT500 with an OCD and a TS style box to stack together, and add my Timeline.

But money no object, I'd get them just to show them off at gear conventions. And if it's good enough for Dave Gilmour... Then again, so was the boss Digital Metalizer apparently!
I always thought he charged crazy money because he'd fix them no matter what, but on his website it looks like they only have a 1-2 year warranty.
I could get by with just a delay and overdrive, but I'd want chorus, phaser and wah and comp. And probably a second delay.

Most travelling session guys I know use bog standard Boss pedals on the road, the logic is that they are reliable and if one fails you can get to the nearest guitar shop to buy a replacement that is exactly the same.
Minimum requirements for me are blackstar HT drive, a chorus and a delay. (Pedal tuner optional).
Fair point. I was really just thinking of taking price out of the equation. My thinking was what's the ideal if your amp isn't a known quantity, what do you take with you to get a decent (set of) usable sounds.
I looked at the HT drive, but never tried it. Might have to give it a listen. I still don't get why delay is so popular ... chorus I get to a degree (it's not me though). I just find delay makes everything less precise (for want of a better word).
