Material by 10CC like "Things we do for Love"
Mr Blue Sky by ELO
And for me, the ultimate pop band who should've been massive - the mighty Jellyfish and this ditty, "New Mistake" and just listen to how the end builds up beautifully. They could pull all of this live!
The greatest hook ever (IMO!)

Wouldn't It Be Nice - Beach Boys
All of the above, only 2 minutes 33 minutes, and you have a key change in the first ten seconds.
Badfinger - No Matter What
Beach Boys - God Only Knows
Crowded House - Don't Dream It's Over
Everything @Kebabkid posted, but especially Jellyfish.
Allow me to add a newer band who were, for a while, heavily influenced by Jellyfish - the much-maligned but inarguably fucking brilliant pop band that is McFly. A group of very capable singers and musicians who wrote utterly joyous songs. I've seen them live and they were bloody amazing too. They got a lot of stick, basically for being young and good-looking, and people obviously didn't think they were worth taking seriously.
Great hooks, great chord progressions, great arranging, superbly executed. I won't hear a word said against them (apart from the fact their lyrics are mostly bunk).
"Take these three items, some WD-40, a vise grip, and a roll of duct tape. Any man worth his salt can fix almost any problem with this stuff alone." - Walt Kowalski

If it was Russ Ballard, only @Gassage would be allowed to refer to him on first name terms ;-)
