My da taught this (and calligraphy) at the town's arts and education centres. He was really into writing with locally-sourced quills (goose/swan) at one point, he made his own reservoirs for them by recycling discarded tinnies. He also experimented with ink...[1] I could post samples of work produced with those (and other) materials.
Maybe you can find a local course?
