I like to use fiebings leather dye. either black or dark brown. it must be done on bare wood, so you may need to clean the board with lighter fluid first and may need to oil again after.
It can stain some inlays, but if you rub down with 0000 wire wool as soon as its dry they should come clean again. Its a good idea to give the board a good rub down with the wire wool after the stain anyway. This will remove the possibility of it coming off on your fingers later.
