Could it be nitro vs poly? I've found poly on a semi acoustic doesn't feel right. A thin nitro finish makes the guitar feel more alive. I was negotiating to buy a Casino 61 reissue which I'd assumed was the original nitro finish but found out at last moment it was poly so had to cancel. Fortunately the seller was very decent about it.

The exceptions to this, for me, are my two Baja teles - an early 50s (there's no WAY that finish could be described as thin!) and a 60s that is a couple of years old now. They feel "old skool" in my hands. I have Japanese Custom Tele too - that's fab, but just doesn't feel nearly as welcoming.
I'm trying to figure out how to describe the difference better. How about: Comfy old sofa that hasn't worn out yet (nitro, oil, these Bajas) or reasonably comfy plastic bench/seating (poly finished guitars). I'm really not sure it affects the tone/timbre, but it definitely affects my perception of playing and which one I'll choose to play.
