But you also get nasty AD/DA clipping, which completely ruins the tone. Basically it hard clips, doesn't soft clip.
So to get around it you have to use the assigns and control the delay level at the same time, in order to artificially give yourself more headroom. And this has it's own set of problems.
Oscillations on the Empress Echosystem, Strymon Timeline, Source Audio Nemesis, TC Flashback, and even the Boss DD7 ... they sound better to me.
m5 has great sounds but huge reliability issues

They're quite harsh but characterful sounding. It definitely requires a peak in the feedback loop at around 1-2kHz. Which on the DD500 with the feedback loop EQ is quite easy.

Are Boss kind of missing the middle ground here?
Not really. If you're the kind of player that only likes a couple of delay sounds then having the DD20's 5 options is easily enough.
The reality is, no one needs 297 presets, but if you need more than 5 then you're already going to be in the mindset of switching banks, so Boss kindly offer you more so you'll never run out.
There is also a fair few years between the release dates of the 2 pedals, so as things moved on technology wise, so much more was possible. Personally I don't really like the DD500, but I think that's because I don't really like overly technical pedals, I just don't have the time to learn them. It's why I like the Boss standard pedals, set and forget
