Greetings folks,

I have a completely unused 240mm Gyuto knife in R2 damascus steel by Hiro Itou. These knives are handmade in the traditional Japanese style and all feature beautiful damascus steel blades and handles of various unusual materials from acrylic-imprgnated-wood to corian to synthetic stone and fossilised mammoth tooth.

My knife has a handle of synthetic malachite.

The reason for selling? Many years ago, I bought a similar knife for our wedding ceremony (cant cut the cake with any old blade!), and in a fit of stupidity (and a small amount of panic that it wouldnt arrive on time from Japan) I purchased a backup from Kin Knives (whom I hadnt known stocked these).

Here is a link to the Kin Knives website and their current Itou blades.
https://www.kinknives.com/itou-knives/itou-gyuto-180mm-128.aspx

Bearing in mind that the knife I am selling is a fair amount longer, with a similar handle, unused though second-hand, I am asking a similar price to these new blades.

Here are a couple of photo's of the knife in question

Any questions, please ask away. If you are interested, we can discuss delivery.

To clarify, I am asking £700, but would happily discuss any trades.

You do need to post an asking price.

Of course - in the midst of typing up (and thinking it was on one of the links), I forgot. Apologies, and consider it done.

For those who watch 'Forged in Fire' - "This, will Keeal"
    The answer was never 42 - it's 1/137 (..ish)

Discovery Channel Blacksmithing competition - 4 rednecks with various amounts of facial hair compete to make knives from Damascus against each other.

    http://www.history.com/shows/forged-in-fire

At the end of each round, the judges test the knives against each other in 'slash', 'cut' and 'kill' tests

The guy who does the weapons testing, Doug Marciada's catchphrase is 'it will kill' but his accent turns it into 'it will keeal"

    Addictive viewing - T-Shirts are available https://dougmarcaida.com/shop/apparel/shirts/will-keal-doug-marcaida-t-shirt/

The knife looks stunning  btw - beyond my means but GLWS!

Cheers. I shall look it up. And regarding the sale, well it is, unfortunately, rather a niche item with limited appeal...

Is there a chef's forum this might be better suited for?

I suspect you're right, but the only reasonable one i found had a 100-post minimum before placing a classified....

  • I can't imagine that anyone on this forum with a spare £700 would rather spend it all on one knife than a new guitar or amp!!
I do appreciate quality though and I reckon that is one amazing knife!

    Is it dishwasher safe?

Technically it probably is. But kitchen knives should never go in a dishwasher - it destroys the edge. Dont know how it would affect the damascus however.

Putting a handmade damascus blade in a dishwasher would be much like using a Brillo pad to clean a '59 'burst....

Hey Adam, I know I'm 4 years late but figured no harm in asking whether you ended up selling this or if it's available?

Ok, as it happens I still have the Itou knife mostly because i havent explored other routes of selling, and it is something of a niche market.
If you are interested in purchasing the knife (it remains unused and in perfect condition), i am happy to answer any questions and provide further photos.
    Cheers,
    Adam

Doesn't it depend which end you hit them with?

Hi, thanks for the offer (and bringing the thread back on track ;) ), let me think about it.
If you were not halfway around the globe, then there wouldnt be an issue. Also, as the original post is now 4 years old, I would want to check what is a reasonable price before agreeing a deal.
    Any questions, however, please ask.
