Grill cloth recommendations for wood stained 4x12

After a very long job of sanding to get that evil glue off, the result is quite lovely, with a very tight almost marble grain with beautiful oil in water grain. I'm half tempted to leave it as is but I know that staining it will protect it against the humidity down in my cellar come summer.
