One of my favourites is to de-bone a whole chicken, cover in cajun spices and then BBQ the whole chicken flat. You get loads of tasty flavoured crispy skin and it's dead easy to carve as it's boneless.
We often do Sunday roast chicken like this in the oven too.

Sounds awesome, how do you do that?
Plenty of videos online, BBC Good Food one is short and simple. I would also recommend watching Raymond Blanc doing it. One of my favourite bits of food telly ever is this whole episode. Shows how easy it is to BBQ a spatchcock chicken.

Our Maud did one following a YT video - she swears she'll never do one again!

She now buys them ready spatch-cocked.  Agreed, they are delicious...

She steams them Lebanese-style on the hob, rather than in the oven.
