Although I don't understand why did didn't rip the boards on the bandsaw, rather than cutting them by hand.

I suspect he used the tablesaw to start the cut and a jap saw to finish because his bandsaw didnt have the cutting depth?
And probably less waste with a straighter ts cut (yes, i know the kerf larger on a ts )

One question though how the hell can the average guitarist ever attempt to change the guitar pots if they wanted to I.e. no rear cavity panel etc? Or is that normal on semi hollow guitars ?

Pretty standard. It’s always a skill to do the wiring in a semi. I usually use a similar method to that
