The scan would give you dimensions, but have bugger all else to do with the qualities of the wood as it is a natural non reproduceable material (as if that really matters... ooh err, heresy too).

At 18 mins they digitally scan they neck.
At 20 mins they physically measure and trace everything.
At 27 mins they make a physical mold of the neck.
At 30 mins they hand it to a guy on the production line to roll the neck shape on a big sander, by feel
The only added value from the digital scan is that it sounds fancy in marketing, at least for this example.

It's just a Gibson Guitar, how accurate it is to the original is only a part of how good it sounds and the people who buy these would not care less how good these sound or plays. That's not why they buy these guitars, so it's all PR.

I'm a bit rusty on the history, but I presume the collectability of original 50's V's and Ex's is down to their scarcity as nobody wanted to buy them at the time? Now they are doing the same thing through purposefully limiting production runs...
