Humbucker wiring help

I have a pair of unbranded humbuckers with black, white, red and bare wires.
I want a simple modern 2xhb 2v and 2t with 3 way toggle no coil cuts.

Black and white on my multimeter give me the correct reading of 7.8k
black and red gives me a single coil reading
red and white also give me a single coil reading.

Is black or white my hot wire?
do I tape off the other 2?

I've done this so many times and nothing sticks in my head, so I'd hugely appreciate the help.
thanks

Black and white are hot and ground - it doesn't matter which as long as you do the same on both pickups. That is, assuming they're the same magnetic polarity - you can check this if you hold them face to face, screw pole to screw pole - if they repel like that, but attract screw pole to plain pole, then they are.

Tape off red - that's the coil junction for splitting. Bare goes to ground no matter which of black and white you've chosen, that's the shielding connection to the cable/baseplate/cover.
