I have one already and perfectly happy with it but looking for the 2100 for the Spinex p-ups and finish.
The arched top makes quite a difference to the acoustic properties of the guitar as well ...
I have an SA-2000S (), an SA-2200 (recent), and an SG-3000S (original). The 2000 and 3000 have Spinex pickups, I believe (not checked the 2000), while the 2200 has the stock Alnico V humbuckers, which I also like.
I wasn't aware that the 2100 had a different top. Is that compared to the 2200?

I recently had an SA 800 which also had an arched top and noticed a different unplugged sound. I think the centre wooden strut has an extra layer as well.
Like the 2100 it also had (non-splittable) Spinex but a rosewood fingerboard.
I do prefer the ebony of the 2200 though.
As far as I know the 2000 only came with Alnico V even though the later ones came with the black spinex covers ...
