Boiling an egg

Why the hell do my eggs all split when I'm boiling 'em

Never used to. Tried putting in a pan of cold water and heating as well as the usual method

Some conspiracy theorists on here must have an answer

  • if you are then don't put eggs in the fridge, or all in one basket..

    we steam ours, much better IMO; quite often ours will be warm from the start where I have just been out to the hen house and collected them.

    I've never cracked the shell of a boiled egg. Makes 'em a bit crunchy, but other than that it's fine.

    best test- take said egg out - if water evaps instantly, it's perfect. This really does work. Put vinegar in to reduce the boiling temp too.

    Anyhoo, I boil the water in the kettle, then put it in the cold pan, then eggs in. Never had a shell crack.

  • I keep eggs at room temp. and they still crack now and again

    I put it in the cold water, bring it to the boil (so the egg warms up with the water), then cook for 3.5 min ... if I'm lucky the white has solidified but often so has the yolk. If I'm unlucky the yolk is still runny but so is half the white.

    Frying: by the time I have splashed enough oil over the top of the egg to solidify the white (trying not to get the yolk until the last few splashes) ... the yolk has already begun to harden.
