I've tried a lot of 8" speakers. The best of them is the Celestion Eight 15. Has a lot more low end and sounds more like a big speaker in the right cab. Avoid the Jensen's unless you're looking for that vintage raspy and harsh overdrive.

AER do a superb job with their amps and the small speakers, no idea what they are though
Imagine something sharp and witty here ......

WGS Warehouse Guitar Speakers do a good 8" so I've heard. Just as good as Weber apparently, but cheaper.

Does anyone have any idea what sort of cab I should make to get the best out of either an eight or ten inch speaker?

In hifi (which as ICBM says is not the same thing) you'd build a cab to match the speaker, which varies by a lot more than just cone size. There are loads of calculators online, but you need basic information such as the resonant frequency of the driver.
