+1 for saving Ryan's privates. For a film course, Robert Altmans The Player is a good one - 7 odd minutes of tracking shot without an edit. 

Four weddings is also a great opening scene. 

Dare I also suggest Raiders of the lost Ark? And the Bond opening sequences are a mini-genre of their own.

I just watched Deadpool, great opening scene, and pretty funny throughout. Other than that, probably Trainspotting or Withnail and I cause I love the music.

Lots to think about there - I'd probably go with Bladerunner, because of the whole atmos, including the soundtrack.

I came here to say The Player but that has already been said (and wis'd) but also Gravity was great at the cinema too. It have me a wonderful sense of scale of man vs Earth
