Just because you're paranoid, don't mean they're not after youSteve Earle - Copperhead Road? Recognisable, 3 chords and adaptable.
He also did a version of Jonny 2 Bad and several of his own are great songs and would have some recognisability factor.
Willie Nelson - The Harder they come or the Keith Richards version. Certainly a recognisable song.
For definitive southern rock Molly Hatchet's Flirting with Disaster, but I don't know how many people would actually know it.
He wants to do some steve earle so that will be on the list I suspect.
I'll check out the Willie Nelson tune.

I Love You Period was a 'radio hit' ie had lots of airplay at the time but nobody bought it. One of the great rock choruses of all time and upbeat, 3 chords (IIRC) so it will survive a few different approaches.

If you don't mind redneck country there's the Brooks & Dunn catalogue. Plenty of hits in there.
