'Stairway to Kevin' seems quite reasonable, always done well.

Also the chaps in 'No Tom' were pretty good.

The appropriately named Andy Gibson in Sixty Sixty Sounds at the far (east) end of Denmark St.  He's done setups on 3 of my guitars.

Gerald Gill at No.Tom sorted out a couple of guitars for me a few years ago.  Nice chap and I was happy with the results.

Last time I was in Kenji Okumura works in Ivor Mairant, not far from Denmark St. Not necessarily the quickest turnaround time but very thorough.

Andy Gibson is good. For bigger stuff i would favour Feline but it's a schlep for me. For vintage I use Celine Camerlynck but it takes her 6 months

Gerard (don't think it's Gerald?) knows offsets especially well if you're that way inclined. Imagine he's seen plenty of high-end action over the years as he's been there since it was Vintage and Rare many moons ago.

Also, isn't Philippe Dubreuille near there somewhere? He's VERY good.
