The brand is suffers from lack of recognition / aspiration yet its products are refreshingly different and very well made.
More recently I've just taken in a Knaggs Acoustic made in partnership with Godin which is brilliant too.

Taylor SB1 Classic. £1500 new, less than a third of that now. The weird acoustic-company-makes-an-electric dichotomy scuppered them I think but they're lovely.
As per the OP, lots of Yamaha stuff is underpriced because of the ubiquity of the brand. The RGX 320 and 520 are superb. The RGX A2 is completely unique but too space-age for many I imagine.
Another brand that suffers from an image problem is Samick - they've made so much over the years for other people, but their own brand stuff is pretty good value.
As above, Godins are excellent, brands like Hondo and Aria made some good guitars but they also made some bad ones so you need to know what you're looking at.
A fun area of guitar buying!
I don't know enough about all the other models of Roadstar, but I wouldn't recommend the Roadstar II that I had. It had a horrible locking trem on it.
