If the idea is to be minimalist I’d go tele and a simple valve combo - I really like those gibson goldtones or ampeg reverb rockets (I’ve used modelers for years so I’m thinking back to amps I’ve never actually owned for some reason). 

Pedal wise probably a bluesbreaker, compressor and delay or reverb (if the amp doesn’t have it)
