Polarity Puzzles!

So I understand about polarity (Boss = centre negative, EHX = centre positive on a mini jack). But ...... If I use a converter from barrel socket(?) to mini jack which has no label, can I assume that it is wired to centre positive (as it is a Jack) therefore reversing polarity - or is that a dumbass assumption???? I have a number of EHX pedals but no matching adapters and too scared to plug them in!! If it isn't that simple, how can you test what the pins are? Is this as simple as putting a meter on it? If so, what meter???? Ta xx

Best way is to test it.

Put a multimeter switched to a suitable DC voltage range across the mini jack.

If you put the red probe to the tip and black to the barrel it should read +something volts (possibly 9, maybe more, depending on the power supply).
