You don't need to look further than Jeff's Word Guitars, all he does is high end, after sales service is fantastic.

Peter Cooks in Hanwell often has some high end 2nd hand stuff and some vintage bits.

Also tend to stock a fair few CS Fenders.

I recently browsed their site and it's nothing like it used to be. Hardly any stock. No CS, a few Fenders... I wonder what's happened.

Actually they have great stock and I like their attention to detail, and Jeff is never boring.

If you don't like Taylors there are much better places to go for acoustics.

They are brilliant for PRS.  They also had a few unusual makes like Knaggs when I went in there.  For Fender / Gibson I'd go elsewhere.

@SteveGV I also accept hefty discounts off CS Fenders Seriously though, great shop, both from a stock and experience point of view. I bought my CS Strat Custom Deluxe and Luther Dickinson 335 from you (that should allow you to work out who I am!)...
