And I've just realised that the valve lever describes an arc, so I'd need a slotted linkage if I use the linear actuator. Bollocks!

I thought that's what we were talking about, a rotary motion, hence the servo connection. I had a quick look on ebay and found a bunch of used rotary actuators for Fords and Audi car vent systems, I don't know how much tech they require to get the control though so hesitated to mention them.

I recall that my old escort and Vdub used 'solid wire' Bowden cables, they didn't flinch at operating a lever with them, used to have big "slider" knob in the dash to move dampers. Bit grim I know.

You can get quite small building air duct damper motors, they work through 90 deg between two stops but they work off 230V AC or 24VDC so they may not be much help.

How about a small windscreen wiper motor, the type they fit to the rear window of hatch backs, the one on my mates Astra wasn't that big!

That would have plenty of grunt and you could fit a pair of limit switches to that to create a stop at open and close positions.

I'm not beaten yet. I shall have a look for some suitable material to make a sliding linkage before I go any further.
