  • We're having a no compromises Full English, all meat from the local butchers (good stuff), Stornoway Black Pudding, local free range eggs etc... Christmas dinner is too much faff - never have turkey any other day of the year so why bother?

    No turkey. Slow cooked beef, pork, proper Cumberland esque sausages, and yip, black pudding. And veg, yorkies, stuffing and gravy etc.

    Anyway, I'm going to bone a turkey (yes, really), then make a mixture of pork sausage-meat, cranberries, chopped apples and nuts, stuff the bird, then tie it up and shove it in the oven.

    Anyway, I'm going to bone a turkey (yes, really), then make a mixture of pork sausage-meat, cranberries, chopped apples and nuts, stuff the bird, then tie it up and shove it in the oven.

    We do a very similar thing, take most of the bones out and make a stuffing of breadcrumbs, ginger, cranberries, pistachio nuts, chestnut,s herbs, butter etc. Stuff the bird and then stitch it up to look like a turkey again.  Cook it the day before and we can either re-heat bits of it or have it cold with the roast potatoes, bacon wrapped sausages, peas, carrots and sprouts.  Yum.

  • My mum and I will have duck. My sister doesn't like duck so she will have a chicken breast wrapped in bacon. My mum has sussed out menus for the whole of the week, and I've agreed to help her do the cooking.

    If I have the time, then I find boning is quite therapeutic, and it does make for much easier carving. Like the sound of the stuffing mix, is that fresh ginger you're using, or the preserved stuff?

  • Mrs NtDJ is planning Venison and Chestnut Casserole. Made the day before so just some mash to rustle up on Xmas day.

    My parents and the in-laws are invited, so hopefully they'll do the washing up while I help my eldest lad build his Lego Fire Station.

    We're at my brother in laws this year so I'm not doing the dinner.
    I will be making my usual "Coca-Cola Ham*" and "pigs in blankets a la Munkee*" to help him out though.
    *Gammon joint stewed in coke then covered in treacle, mustard, cloves and sugar and baked.
    *good sausage meat mixed with chopped dried cranberries, fresh parsley and wrapped in good smoked streaky.
    Shot through the heart, and you’re to blame, you give love a bad name. Not to mention archery tuition.
