Another vote for Hells Bells.  The way it builds for that first minute or so then really kicks in.... still gives me chills every time I hear it.

And believe it or not... Smoke On The Water.  Again, it's the way it builds - the guitar, then the drums and organ, then (especially) Glover's bass.  It just kills me.  I love the Made in Japan version too.
