I’ll start...

Any of the Yes albums with Roger Dean artwork.

Down by the Jetty - Dr Feelgood.  The black and white photo of the band somehow just captures something about the band.

The Band - The Band. As above except for the photo being sepia.

London Calling - The Clash.  Just iconic.

I did think of DSOTM and Sgt Pepper but suspect that they have become great over time rather than being instant greats.
I play guitar because I enjoy it rather than because I’m any good at it

    A bit pompous, but I really like the covers of all the mid/late '70s Kansas albums, especially the way they tweaked the Kansas logo each time.

    Some others will probably spring to mind.
