Inspired by the kebab thread... What's your favourite hot sauce?

I'm an addict, I've got a collection of sauces in my work fridge. I like a good power sauce that you only need 1/2 drops of... but I also love a good kebab style sauce (cofresh, noels etc.).

What are your recommendations?

I like Mr Vikki's HHH http://www.mrvikkis.co.uk/Item/hellisly-hot-habanero I like them hot but I have a few like Dave's Instanity Sauce and He Who Dare's burns (2nd assault) that are a bit much, but as long as you literally only put one or 2 drops in they can be okay. I think my all time best one is my own recepie, it's definitely better when you make it fresh, the only trouble is you end up with burning eyes for a few hours after cooking it.

I don't really use proper hot sauce. Sweet thai chilli, chilli jam are my kind of thing.

I have two in my fridge at the moment, a chipotle one and a one based on the fearsome bhut jolokia. Both are disappointingly mild. I've had Who Dares Wins and Dave's Insanity Sauce and they're a painful kind of heat - one drop is enough. I think I need to find a nice habanero-based one, the heat from those is accompanied by flavour. Some of them are too vinagery as well - Cholula is a great alternative to Tabasco (I consider Tabasco to be the Nescafe or Dairy Milk of chilli sauce - ubiquitous but crap).

I'm mainly a Tabasco Habanero man, but do like the Levi Roots scotch bonnet sauce when I can find it.

Not very powerful but i could use it instead of (and in similar quantities to) ketchup.....yum.

I literally drink the extra hot version of this. I try to keep a varied stock of them though, the Thai one is wicked with chicken in sandwiches.

I like the Green and Chipotle Tabasco's too

This stuff is good, but I found a bottle in a deli once that had the label in Spanish ("Muerta" etc), apparently it was "export strength" for the Mexican/Hispanic market and it was bloody lovely. Just the right mix of heat and taste for me.
