Once you've got the knack it's not so hard.
What weapon are you using?
There are three starter weapons - the cane (skill build), the saw cleaver (probably easy mode) and the hunter's axe (more strength focused). Saw cleaver is nicely balanced.
Cool trick a lot of people don't know when the begin - you can swing the weapon (say, R1 swing) then use the trick weapon transform to do a transform attack. These can be pretty powerful, worth experimenting with. The saw cleaver is great for this, and if you've had a beast blood pellet you'll quickly become quite lethal!
Depends what weapon you have really. If you have the cane, pump into skill and life, and use the gun for visceral attacks. Some larger mobs can be killed by backstabbing (not like dark souls - you need a fully charged R2 attack from behind to stagger, then a second attack to backstab). The piggy in the sewers is a good mob to practise this on.
Visceral attacks scale with skill.
If you have the saw cleaver you'll want a bit more in strength as well (I think - you can see how weapons scale at the level up screen).
Most of my echoes are spent on health vials and hunters marks!
Don't forget to upgrade the weapon. That boosts damage a fair chunk. If you struggle with dying, pump into life a bit - a few points goes a long way early game.
I guess it's down to whether you just want to dib your toes and try a lot of games or get serious and have lots of money to buy real carts.
